Meet Your Dietitians

Tulane Hospitality's team of expert dietitians can help you meet your nutrition goals, monitor your restrictions, and help you understand how to make the most of your college dining experience.

  • Kaiten Zajac, MS, RD, LDN – Director of Health and Wellness

    Kaiten Zajac leads Tulane Hospitality’s health and wellness initiatives. She holds a Bachelor’s in Dietetics from the University of Texas and a Master’s in Nutrition and Dietetics from Arizona State University.

    Since joining Aramark in 2018, Kaiten developed award-winning food allergy programs and supported schools across the Midwest. At Tulane, she collaborates with the culinary team to provide dietary accommodations and hosts events promoting wellness. Her goal is to empower students to understand their nutritional needs and make choices that support their health

    Allow us to show you the ropes at the Malkin Sacks Commons and Green Wave Grille to help you feel right at home in our dining halls.

  • Guest Presentations

    Looking for experts on matters of nutrition? Look no further! We can speak to your group about food, nutrition, and more!

  • Wellness Workshops

    We can provide specialized presentations and fun activities focused on health and nutrition for dorms, classes, and student organizations.

  • Performance Nutrition Support

    We work with Tulane Athletics to provide well- balanced menus at the Green Wave Grille to keep you performing at your best on-and-off the field.

Eating Safely at the Commons

The Malkin Sacks Commons is Tulane University's primary dining hall. We take the following steps to make sure that everyone enjoys a safe dining experience.

    The Malkin Sacks Commons - A Nut-Free Facility

    The Malkin Sacks commons is a nut-free facility. Nuts are not used in any of our recipes, and we ask all of our guests to refrain from bringing in outside food items.

    On the second floor of the Malkin-Sacks Commons, you can find our Allercheck-certified True Balance station. This station features specially trained staff members that serve delicious meals made without gluten, or the top nine allergens. Recipes at this station do not include eggs, milk, peanuts, tree nuts, sesame, fish, shellfish, soy, and wheat.

    The Stress-Less Pantry

    The Stress Less Pantry, next to the True Balance station, is a dedicated space designed for guests with a medical need for gluten-friendly food options. Those looking to use the pantry must submit an application and undergo training on how to properly use and care for the pantry. Find more info about the pantry and apply for access here.
